Oils from plants are interesting lipid components that can be used in many applications such as in medicine and food. Vegetable oils from oat (Avena sativa L.) and pumpkin (Cucurbita pepo L.), and essential oils from Artemisia phaeolepis, Citrus aurantium L., and lemon (Citrus limon), are the main target samples in this manuscript. Characterization and potential applications of such plant oils are detailed in relevant scientific publications just mentioned in this book. As such, this book could be considered as a compendium covering the author' published articles in the field of the importance of plant oils as natural agents used in many applications particularly in nutraceutical uses.
