Pineapple has proteolytic enzyme called bromelain. Bromelain has several medicinal effect, recent research even prove the effectivity of Bromelain in treatment of HIV/AIDS patients. The problem with pineapple fruit is their short shelf life as the fruit spoil easily. Instant drink powder has relatively longer shelf life and thus it is a suitable product type for this. However fruit juice drying is challenging as it tends to have stickiness and the high temperature of drying might damage the bromelain enzyme. To make an instant drink product that maintains its chemically active compounds especially bromelain , spray drying and freeze drying methods with different treatment were analyzed .This book will offer analysis of the pineapple extraction process and how to overcome the challenge and problem met during the process.
