Black Sea Urchin (Stomopneustes variolaris)

Sea urchin gonads or the roe is a delicious food with a high nutrient and protein content. Hence the sea urchin gonads have a very high demand in the world market since they can be used as a supplementary protein source instead of fish in addition to the many other health benefits they provide. This book provides information about the important nutrients in sea urchin roe and safety of sea urchin gonads as a food for people who are considering to establish sea urchin farms in the Asian region including Sri Lanka.
