In this book a comprehensive literature survey of tropical fruits, compositional changes during ripening process, market requirement, various storage conditions and different fruit quality assessment techniques was carried out. At the beginning concepts of the e-nose technology is explained. Different types of gas sensors, signal processing, pattern recognition, hardware software employed, their advantages and limitations have been thoroughly discussed.The book clearly provides idea about design, development and fabrication of e-nose and machine vision based fruit sorter system for fruit ripeness assessments. The developed systems performance testing through various experiments are explained. The statistical as well as neural and fuzzy algorithms are explained with experimental data analysis. The book gives clear idea about evaluating performance of developed systems. The results from the system was validated with human based fruit grading and physico-chemical analysis methods including firmness, TSS and pH are explained.

Dr. Ashok Kanade is currently working as Assi.Professor in Electronics at P.V.P. College, Pravaranagar, Affiliated to SPPU University, Pune, India .He has 14 years of teaching and research experience. His research interests include Electronic Noses, Electronic sensor and systems, Embedded Systems, Machine vision based systems, Art. intelligence.
