Development of mass and heat transfer models

The book illustrates general aspects of drying and the conventional techniques involved. The theoretical and empirical models cited are very useful to represent drying kinetics. They describe better and better the simultaneous phenomena of heat and mass transfer in a porous medium. Because of the complexity of the porous medium and the diversity of interactions between phenomena, the study of these transfers remains a topical subject.
