Development of Ready to eat corn grits enriched with nutraceuticals

The steps for developing a functional food from maize and skunk vine is presented in this book. The research work is done on Paederia foetida L. plant and its hydrosol is used and mixed in corn grits. The roasted corn grits is made which is enriched with plant extract. The book contains research work on developing a functional food using the plant skunk vine and corn grits. Skunk vine (Paederia foetida L.) is an invasive plant in USA but it have many medicinal values and therefore it is used as folk medicine in India.

Himanshu Ekka a obtenu son B.Tech. (ingénierie agricole) de l'IGKV, Raipur (Chhattisgarh) et son M. Tech.(ingénierie post-récolte) de l'IIT Kharagpur. Il a passé les examens GATE et NET. Il est actuellement professeur adjoint à l'IGKV, Raipur (Chhattisgarh). Il a de l'expérience dans le développement de machines et le travail sur des projets.
