This book has been able to effectively audit the total Energy involved in the baking of Bread with wood as the main source of Energy in some cities in Nigeria with a view to establishing the fact that Wood as Fuel in the baking process consumes a large amount of Energy and it s use comes with some harmful effects such as deforestation, landslides, erosion, extinction of useful plants and animals, green house effect etc.The Energy analysis involves the computation of total Energy consumed in each Energy consuming Operation of Bread baking. Bread baking consists of four Energy consuming Operations namely Mixing, Kneading, Moulding and Baking. Each of these Operations requires Thermal Energy, Manual Energy and Energy consumed in kneading Operation as a result of Diesel Fuel used (ECKD) or their combination. The Energy computation Equations were employed to determine the Energy consumed in each of these unit operations.Finally the Work recommends other forms of energy which are less Energy sapping and involves little or no side effect to the environment.

Autorentext

Modiu Olayinka Durowoju hails from Abeokuta in Ogun State, Nigeria. He obtaied his B.SC in the year 1995 in Mechancal Engineering from the University of Lagos(UNILAG). He obtained his M.SC in the year 1998 from the University of Ibadan also in Mechanical Engineering. He later obtained his PhD from Ladoke Akintola University of Technology,Ogbomoso.
