The slaughterhouse is a place where a series of controlled operations are carried out, using instruments and machines, so that its activities pose various risks to human beings, the environment, the facilities and, consequently, the enterprise. As a solution, control or minimisation of risks, the risk management technique emerges as an option at all stages of the process in order to provide a successful end result. Therefore, in this work, environmental risk management was carried out at the municipal slaughterhouse in Pau dos Ferros - RN, using the Preliminary Risk Analysis (APR) methodology. Presented in an original and didactic way, this work refers to the monograph developed by the authors at the Federal Rural University of the Semi-Arid (UFERSA, Campus Pau dos Ferros/RN).
