Extraction of Pectin from Selected Fruit Peel

Waste utilization in fruits and vegetable processing industries is one of the important and challengeable tasks around the world. Considering the challenges in the area of food industry and juice processing house, efforts are to be made to optimize processing technologies to minimize the amount of waste. Solid waste such as fruit peels waste used to produce pectin can be largely obtained as a byproduct from juice processing industries, hotels, restaurants and juice processing houses in our country. The Fruit peel waste minimization during the production process, environmentally friendly preservation of the fruit peel, and utilization of fruit waste by-products would substantially reduce the amount of fruit waste, as well as boost the environmental aspect of fruit processing industry. Fruit peels mainly end as a waste and this means a valuable material is discarded but could be put to better use by extracting the pectin. Pectin can be used as food and pharmatecitical additives. In general, the finding of the study shows that pectin, being used as food and pharmaceutical additives, can be obtained from banana and mango peel.
