This books highlights the ginger processing industry and the basic principles of machine design concepts from first principle with step by step procedures. The machine design is empirical, conceptual and scientific which involved the use of information from handbooks, experience and scientific principles. The performance of the machine was evaluated in terms of throughput capacity, pulverizing efficiency, energy coefficient, losses and reduction ratio yielded 96 kg/hr; 75.57%, 30.44kg/hp; 24.43% and 21:1 respectively. A comparative performance evaluation with traditional method of ginger pulverizing in terms of throughput capacity; pulverizing efficiency and losses showed a significant difference.
