Present study is on Kinetic studies of lactic acid production from lactobacillus cells The thesis contains following parts; Screening of microorganism for lactic acid production, Optimization of medium components, Production kinetics, Strain improvements, and lactic acid recovery. Screening of microorganism was done on the basis of lactic acid production, substrate utilization, and cell mass formation by three species L. helveticus, L. delbrueckii and L. casei. Among three species studied L. delbrueckii was found to utilize maximum (88%) glucose and (90%) sucrose and thus produces 82 g/l lactic acid with cell mass 10 and 11 g/l. Maximum yield obtained on increasing sucrose concentration from 10% to 15%, was 0.89 g/g while on increasing sucrose up to 20% results in decrease of yield (0.61 g/g). As sucrose is present in cane molasses which is cheap and widely available in India, therefore, L. delbrueckii was used with cane molasses for lactic acid production. Media optimization and lactic acid purification was done by Taguchi methods ;strain improvement was done by UVmutagenesis.

Author did his PhD in Biochemical engineering, Indian institute of Technology, Banaras Hindu University, Varanasi India in 2010. The work was focused on "Kinetic studies of Lactic acid production from lactobacillus cells". Author has two Indian patents over the work and have published more than 12 papers in national and international journals.
