Due to the inconsistent power supply in Nigeria and other developing nations, this study was carried out for its preservative, economic, health and scientific reasons. The processed chicken thigh with use drum kiln model will enhance consumption of the chicken meat with attendant increase in poultry market. The study will also look at the advantages of smoking with use drum kiln over other methods of processing like frying which are associated with the following health challenges like cardiovascular disease, hypertension, heart failure, strokes which may be linked to high content of fats in their products, Smoking with use drum kiln also led to stability, storability and increases the shelf life of the product.
