The manuscript investigates the effects of osmotic dehydration on mass transfer properties such as water loss (W), solute gain (S) and weight reduction (G) during osmotic dehydration were investigated in order to determine the usefulness of this technique as pre-treatment for further drying of litchi pulp.The author has attempted to utilize his teaching and research experience towards writing the present book for the benefits of students and teachers in the field of agriculture as well as agricultural engineering. The chapters are systematically organized to include the most relevant theoretical background pertaining to each unit operation, the objectives , theories, expected results. Throughout its development, the focus always remained on producing a technically sound material of test methods and protocols. The present book will be surely liked by the students of both B.Sc. (Ag.) and B.Tech. (Agril. Engg.) and also by the teachers in the field of agriculture and agricultural engineering.
