The present textbook highlights in a very simple way,the fundamental principles of how Polycyclic Aromatic Hydrocarbons in some smoked foodstuffs can be obtained and estimated. The book treats the effect on human health,routes of exposure,concentration of Polycyclic Aromatic Hydrocarbons in some food as reviewed,effect of Polycyclic Aromatic Hydrocarbons in the immune system and calculations for sample analysis.
