The rapid growth in global food demand, coupled with the rise in chronic diseases, underlines the importance of a healthy, sustainable diet. Pulses are emerging as foods of choice, thanks to their richness in nutrients, plant proteins and fiber. Current scientific evidence suggests that legumes have significant nutraceutical potential, contributing to the prevention of chronic diseases.This review explores the diversity of legumes, highlighting their different varieties and nutritional value.In Algeria, legumes occupy an important place in the diet, but local production remains limited, resulting in dependence on imports. This review analyzes their presence on the Algerian market, their environmental impact and possible strategies to promote their consumption and local production. By offering a global view of legumes, this review highlights their nutritional assets, their health benefits and their potential in the development of sustainable food systems.
