Quality of Condensed Milk

Indian scripts have been described milk as the elixir of life or Amrita. India has now become the largest producers of milk in the world. The demand for milk and milk product in India is increasing day by day. Among Indigenous dairy products, Condensed milk (Khoa/Mawa) is very rich in total solids and hence highly nutritious food in the diet of human beings. Food adulteration is fast growing worldwide as an industry. Global market of adulteration and fake goods is more than several hundred billion dollars which constitutes more than 10 percent of total trade. At present, the acceptable quality and nutritional quality of milk and milk products are deteriorating day by day with the view of wholesalers and retailers to make more money from less production. Nevertheless, there are only few studies has been taken up for asses of quality of milk product especially Condensed milk Product. The present book "Quality of Condensed Milk - The methodology & Evaluation" has been prepared with a clear study of sensory quality, chemical quality and different adulterant find out in condensed milk which will be most helpful to the consumer, study beginner, researcher to find out its quality.
