This monograph is devoted to the most pressing problem-citrus juice adulteration. The monograph highlights the current state of the problem of citrus juice adulteration and examines virtually all aspects of its production. Separate sections are devoted to methods of analyzing citrus juices, their expert evaluation, and methods of detecting adulteration. The monograph also presents methods of analyzing citrus juices developed by us, tested by the forensic department of the Georgian Ministry of Internal Affairs, and recommended for use in arbitration practice. The monograph, as a supplementary textbook, is intended for students and master's students of universities specializing in "Alcoholic and Non-Alcoholic Beverages," as well as for researchers, specialists of juice manufacturing enterprises, suppliers, and state control and supervisory authorities.
