Every year, 2 million people worldwide suffer from direct pesticide poisoning, of which about 50,000 result in death. Depending on the structure of pesticide contamination, there is an increase in cardiovascular and endocrine pathologies, and allergic diseases are becoming more widespread. However, a much greater hidden danger to human health is posed by small amounts of pesticides and their metabolites, residues of which may be found in food products, not only in plants, but also in meat, milk, fish, and poultry. Some pesticide metabolites are more toxic than the original substance.
